Forest French 75

One of the drinks I served at my 2018 Christmas cocktail party.



Ingredients

1 oz spruce infused gin*
1 tsp fresh lemon juice
1/4 oz pine syrup (available at Italian Centre or make your own**
2 oz sparkling white wine (tonic water could be used instead to reduce calories and alcohol content)
Sugared cranberries ***

Method

Mix gin, lemon juice and pine syrup in ice filled cocktail shaker. Strain into champagne glass and top with sparkling wine.

Garnish with 3 sugared cranberries and spruce tip or rosemary sprig.

* Thoroughly wash a small fresh spruce branch and add to 750 ml bottle of gin for 24 hours. Remove branch and put gin in freezer.

**For spruce syrup, boil 1 cup of water, one cup of sugar and a handful of new spruce tips for five minutes. Let cool and strain into bottle. Store in fridge for up to 2 weeks.

***Sugared cranberries: heat one cup water and one cup of sugar on stove until sugar dissolves. Add 1 bag of cranberries and simmer for one minute. Do not allow to boil. Strain cranberries and dry overnight on wire rack. Toss with granulated sugar and dry overnight on parchment paper. Use within 2 days.
